INGREDIENTS

10 large eggs

½ cup greek yogurt

1 tbsp olive oil

1 leek, white and light green parts chopped

200g (or two bunches) of asparagus, trimmed and cut into 1/2-inch pieces

1 cup frozen peas
-
200g baby spinach

salt and pepper, to taste

100g goat cheese or feta

Fresh dill to garnish
Steps:

Preheat oven to 200 degrees and heat the oil in a 10 inch oven safe pan.

Saute the leak over medium heat for 2 minutes. Then add the asparagus and saute for another 2 minutes

In a separate bowl mix the eggs, yoghurt, salt and pepper. Once whisked pour over the other vegetables in the pan.

Cook for 3 minutes then add the remaining vegetables

Sprinkle goats cheese over the top and transfer to the oven for 15-20 minutes or until cooked through.

Garnish with dill before serving
