Roasted Honey – Thyme Carrots with Whipped Feta

A festive side that looks impressive, tastes unreal, and requires almost no effort, ideal for “I didn’t know what to bring” energy.

Ingredients (Serves 6)

For the carrots:

  • 1 kg baby carrots (or regular carrots cut into sticks)
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp butter (optional)
  • 1 tsp sea salt
  • Cracked pepper
  • 2–3 sprigs fresh thyme
  • Zest of 1 lemon

For the whipped feta:

  • 200g feta
  • ½ cup Greek yoghurt
  • 1–2 tbsp olive oil
  • 1 small garlic clove (optional)
  • Squeeze of lemon

To serve:

  • Extra thyme
  • Toasted almonds or pistachios
  • Honey drizzle

Method

1. Roast the carrots

Preheat oven to 200°C (180°C fan).Toss carrots with olive oil, honey, salt, pepper, thyme and lemon zest.Spread on a baking tray and roast 25–30 minutes, until caramelised and golden.

2. Make the whipped feta

Blend feta, yoghurt, olive oil and lemon until smooth and creamy.(If too thick → add a splash of water or more olive oil.)

3. Plate it beautifully

Spread the whipped feta on a serving plate.Top with roasted carrots.Finish with toasted nuts, thyme and an optional honey drizzle.
