Ingredients (Serves 4)
For the capsicums

1 red capsicum per person, crown removed and core taken out

Crack of salt & pepper

Drizzle of extra virgin olive oil (EVOO)
For the beef filling

500g premium beef mince (sub cooked lentils for vegetarian option)

1½ cups cooked black rice (sub with any rice of choice)

1 red onion, diced

3 garlic cloves, minced

1 chilli, diced

1 zucchini, grated

300g diced tomatoes

2 tbsp tomato paste
-
Juice of 1 lemon
-
1 tbsp EVOO
-
Salt & pepper to taste

3 tsp dried oregano
-
2 tsp cumin
-
2 tsp paprika
-
½ cup diced spring onion & coriander (optional)

1 tbsp grated cheese per capsicum (mozzarella or your preferred cheese)
To serve

Lemon wedges

Torn coriander leaves

Pickled red onion (optional)

Sliced avocado (optional but highly recommended)
Method

Cook your black rice using a rice cooker or the stovetop absorption method: 2½ cups water to 1½ cups rice.

Preheat the oven to 180°C (fan forced). Slice the crowns off the capsicums and remove seeds and cores. Place them in a baking tray, drizzle with EVOO, and season with salt and pepper. Bake for 15 minutes until slightly softened and caramelised. Set aside.

Prepare the filling: Heat a frypan over medium heat and add EVOO. Sauté red onion, garlic, and chilli until softened. Add tomato paste and cook for 1–2 minutes until rich and fragrant.

Add the beef mince, breaking it up with a spoon. Stir in spices, diced tomatoes, and lemon juice. Once combined, add grated zucchini and cooked rice. Simmer for a few minutes to reduce excess liquid.

Stir through spring onion and coriander (if using), then turn off the heat.

Drain the capsicums upside down over the sink to remove excess moisture. Fill each capsicum with the mixture and top with grated cheese.

Bake again for 15 minutes until cheese is melted and golden brown.
