Healthier Passionfruit Slice Recipe

Prep time: 20 minutes

Chill time: 2-3 hours

Serves: 12 slices

Ingredients

Base

  • 1 ½ cups rolled oats

  • ½ cup almond meal

  • ½ cup desiccated coconut

  • 3 tablespoons coconut oil, melted

  • 3 tablespoons honey or maple syrup

  • 1 teaspoon vanilla extract

  • Pinch of salt

Passionfruit Yoghurt Topping

  • 1 ½ cups Greek yoghurt

  • ¼ cup cream cheese (optional, for a more traditional slice texture)

  • 3 tablespoons honey or maple syrup

  • 1 teaspoon vanilla extract

  • 4-5 passionfruit, pulp only (for an easier option, you can buy tinned passionfruit pulp)

  • 2 teaspoons gelatine powder mixed with 2 tablespoons warm water (optional, for a firmer slice)

Method

  1. Line a small slice tin (approximately 20 cm x 20 cm) with baking paper.

  2. Add rolled oats, almond meal, coconut, melted coconut oil, honey, vanilla, and salt to a food processor. Blend until the mixture sticks together but still has texture.

  3. Press the mixture firmly into the lined tin and refrigerate for 30 minutes.

  4. In a bowl, mix Greek yoghurt, cream cheese (if using), honey, vanilla, and passionfruit pulp until smooth.

  5. If using gelatine, stir it through the topping mixture to help the slice set firmly.

  6. Spread the passionfruit yoghurt mixture over the chilled base.

  7. Refrigerate for 2-3 hours until set.

  8. Slice into squares and top with extra passionfruit pulp before serving.

Tips for the Best Passionfruit Slice

  • For a dairy-free version, swap Greek yoghurt for coconut yoghurt.

  • Add crushed macadamias to the base for an extra Australian twist.

  • Keep the slice chilled until ready to serve, the topping is soft and creamy.
