Recipe: Spring Frittata

Spring produce includes a wide range of tender green vegetables and the start of Summer fruits. Key highlights include asparagus, carrot, lettuce, and peas, alongside early-season fruits like strawberries, apple, watermelon and lemons

INGREDIENTS

  • 10 large eggs

  • ½ cup greek yogurt

  • 1 tbsp olive oil

  • 1 leek, white and light green parts chopped

  • 200g (or two bunches) of asparagus, trimmed and cut into 1/2-inch pieces

  • 1 cup frozen peas

  • 200g baby spinach

  • salt and pepper, to taste

  • 100g goat cheese or feta

  • Fresh dill to garnish

Steps:

  1. Preheat oven to 200 degrees and heat the oil in a 10 inch oven safe pan.

  2. Saute the leak over medium heat for 2 minutes. Then add the asparagus and saute for another 2 minutes

  3. In a separate bowl mix the eggs, yoghurt, salt and pepper. Once whisked pour over the other vegetables in the pan.

  4. Cook for 3 minutes then add the remaining vegetables

  5. Sprinkle goats cheese over the top and transfer to the oven for 15-20 minutes or until cooked through.

  6. Garnish with dill before serving

How to Add More Magnesium

If you'd like to increase the magnesium content of your frittata you can choose other magnesium-rich vegetables to add.
