Magnesium-Rich Chickpea Salad with Lemon Tahini Dressing

Here's a fresh and zesty chickpea salad packed with magnesium and vibrant flavours. Perfect for a light lunch or a hearty side dish, this salad is both nutritious and satisfying.

Magnesium-Rich Chickpea Salad with Lemon Tahini Dressing

Ingredients

For the Salad:

  • 1 can chickpeas (400g, drained and rinsed)
  • 1 cucumber (about 200g, diced)
  • 200g cherry tomatoes (halved)
  • 1 small red onion (about 100g, thinly sliced)
  • 1 handful fresh parsley (about 20g, chopped)
  • 1 handful fresh mint (about 20g, chopped)

For the Lemon Tahini Dressing:

  • 3 tbsp tahini
  • 1 lemon (juice and zest)
  • 2 tbsp olive oil
  • 1 garlic clove (minced)
  • 1 tsp ground cumin
  • Salt and pepper (to taste)
  • 2-3 tbsp water (to thin the dressing, as needed)

Instructions

  1. Prepare the Salad:

    • Drain and rinse the chickpeas, then place them in a large mixing bowl.
    • Dice the cucumber and halve the cherry tomatoes. Add them to the bowl with the chickpeas.
    • Thinly slice the red onion and chop the parsley and mint. Add these to the bowl as well.

  2. Make the Lemon Tahini Dressing:

    • In a small bowl, combine the tahini, lemon juice, and lemon zest.
    • Add the olive oil, minced garlic, and ground cumin. Mix well.
    • Gradually add water, one tablespoon at a time, until you reach your desired dressing consistency. It should be pourable but not too runny.
    • Season with salt and pepper to taste.

  3. Assemble the Salad:

    • Pour the lemon tahini dressing over the chickpea and vegetable mixture.
    • Toss everything together until the salad is well coated with the dressing.

  4. Serve and Enjoy:

    • Transfer the salad to a serving bowl or plate and enjoy immediately. This salad is perfect on its own or as a side to your favourite dish.
