Magnesium-Rich Marry Me Chicken Pasta

Magnesium-Rich Marry Me Chicken Pasta

Ingredients:

For the chicken:

  • 4 organic, free-range chicken breasts (about 600g), skinless and boneless, cut into bite-sized pieces (always opt for organic when possible to avoid additives)
  • Salt and pepper to taste
  • 15mL extra virgin olive oil

For the pasta:

  • 225g chickpea penne pasta (swapping to this alternative will increase the fibre and protein content)
  • Water for boiling

For the creamy sun-dried tomato sauce:

  • 15mL extra virgin olive oil ( heart-healthy fats and packed with magnesium)
  • 2 cloves garlic, minced
  • 15mL all-purpose flour
  • 240mL low-sodium chicken broth
  • 240mL coconut milk 
  • 60g grated plant-based Parmesan cheese ( Opt for a reduced-fat or plant-based Parmesan cheese alternative to lower the saturated fat content)
  • 60g sun-dried tomatoes, drained and chopped
  • 5mL paprika
  • 5mL Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves, chopped, for garnish
  • Fresh cherry tomatoes,  for garnish

Instructions:

  1. Prepare the Chicken: Season the chicken breast pieces with salt and pepper. In a skillet, heat 15mL of extra virgin olive oil over medium-high heat. Cook the chicken for 6-8 minutes until no longer pink and cooked through. Transfer the cooked chicken to a plate and set aside.

  2. Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain the pasta and set aside.

  3. Prepare the Creamy Sun-Dried Tomato Sauce: In the same skillet used for the chicken, add 15mL of extra virgin olive oil. Sauté the minced garlic until fragrant. Stir in the flour to create a roux.

  4. Add Liquid Ingredients and Cheese: Gradually whisk in the chicken broth and coconut milk. Stir in the grated Parmesan cheese until melted and smooth.

  5. Stir in Remaining Ingredients: Add the chopped sun-dried tomatoes, paprika, and Italian seasoning to the sauce. Season with salt and pepper to taste. Simmer the sauce for a few minutes until thickened.

  6. Combine and Serve: Return the cooked chicken to the skillet along with the cooked pasta. Stir to coat the chicken and pasta in the creamy sauce.

  7. Garnish: Sprinkle chopped fresh basil leaves and some chopped cherry tomatoes before serving.
