Vegan Overnight Blueberry Oats

Ingredients:

  • 1 cup rolled oats
  • 1 cup almond milk (or any plant-based milk of your choice)
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flaxseed
  • 1 teaspoon almond extract or a dash of cinnamon
  • 1 mashed ripe banana 
  • 1/2 cup fresh blueberries 
  • Crushed walnuts

Instructions:

  1. Mix the Base: In a mixing bowl or a jar, combine the rolled oats, almond milk, chia seeds, ground flaxseed, almond extract or cinnamon, and mashed ripe banana. Stir well until all ingredients are fully combined.

  2. Cover and Chill: Cover the oat mixture with a lid or plastic wrap and refrigerate it overnight, or for at least 4 hours. This allows the oats to soften and absorb the flavours.

  3. Serve: The next morning, give your oats a stir. If it's too thick, you can add a splash of almond milk to loosen it up.

  4. Top with Blueberries and Walnuts: Before serving, top your oats with fresh blueberries and crushed walnuts. This adds a burst of flavor and a satisfying crunch to your breakfast.

  5. Optional Toppings: Get creative with toppings! You can add a drizzle of almond butter, a sprinkle of cinnamon, or a splash of extra almond milk for added creaminess.
